Complex corners often require multiple pieces cut to precise angles. These angles are pulled from the wall which isn't always a perfect 90 degrees.

Sometimes. For most ceilings, there is some wiggle-room to fit crown without having to tinker with the drywall. While some crown profiles can be scribed, ceilings that are really uneven should be floated with drywall mud by a drywaller.
